Since its creation in 1987, the Bocuse d’Or has changed considerably. Faced with ever-increasing demands, each candidate’s budget has had to adapt and now amounts to several hundred thousand euros. This requires the mobilization of a team and the contribution of partners. In this context, Team France was created in 2012 to support and guide the French candidate for the Bocuse d’Or. It includes chefs, Meilleur Ouvrier de France chefs, Bocuse d’Or winners, coaches, restaurant professionals, committed partners, and simply passionate food lovers. This complementary expertise is its strength.

President of Team France: François Adamski

Team France was founded to support and guide the French candidate for the Bocuse d'Or, following significant mobilization from numerous countries. Composed of Michelin-starred chefs, Meilleur Ouvrier de France (Best Craftsman of France) recipients, Bocuse d'Or candidates, restaurant professionals, and partners, the team's complementary skills make it a strong team that supports the candidate throughout the competition, all the way to the final.

Creation of a fully equipped space (kitchen with communal dining table, bedroom, gym, etc.) for candidates participating in the Bocuse d'Or competition. This allows them to train in optimal conditions, just like top athletes.

First woman and youngest Chef to win the French selection and then represent it at the Bocuse d’Or 2023 Final. During this final, she won the prize for the best “Feed the Kids” menu (best children’s menu).

Romuald FASSENET

President

Romuald Fassenet, Meilleur Ouvrier de France (Best Craftsman of France) 2004, has built a career guided by excellence and curiosity, from the kitchens of Matignon to the Tour d’Argent, and internationally. A Michelin-starred chef at the Château de Mont Joly in the Jura region and consulting chef at the Pashmina in Val Thorens, he is also passionate about sharing his knowledge. He has accompanied the teams from Japan and Australia to the Bocuse d’Or and has been committed for years to promoting French gastronomy.

A Michelin-starred chef at Yohann Chapuis’s Greuze L’Écrin restaurant and also at Le Bouchon Bourguignon, he is Davy Tissot’s official coach, having guided him daily to victory in 2021, advising and supporting him throughout this collective adventure. In 2024, he partnered with and designed the menu for a new Parisian bistro, La Riotte, thus continuing his commitment to high-quality yet accessible cuisine.

Drawing on nearly 20 years of marketing experience in the food industry, Pascal manages the team’s finances and provides strategic support. Working alongside renowned chefs, he actively promotes French gastronomy internationally.
