Bocuse d’Or France winner, Paul Macron will represent France during the next Bocuse d’Or Europe on the 19th March in Trondheim (Norway) with his commis Camille Pigot who’ll be in the box by his side. They will be accompanied by chef “Meilleur Ouvrier de France” Christophe Quantin as official coach. The chef “Meilleur Ouvrier de France” Davy Tissot, Bocuse d’Or 2021 winner, will be jury’s member representing France during this competition.
Originally from Auvergne region, Paul Marcon grew up in the kitchens of Saint Bonnet-le-Froid, at the heart of a region rich in natural beauty. Cooking quickly became an obvious vocation. Driven by the spirit of competition, Paul Marcon took part in his first competition, the Worldskills France, at the age of 16, finishing second in the national final. He reached the world final a few years later. After honing his skills in a number of Michelin-starred establishments in Lyon, he spent 2 years in Stockholm at the AIRA** restaurant run by chef Tommy Myllymäki, winner of the 2011 Bocuse d’Argent. It was an experience that enabled him to discover other techniques and enhance his expertise. It wasn’t long before Paul Marcon was back competing again. In 2022, he won the Trophée Jean Delaveyne. Back in France, Paul Marcon joined the kitchens of his family’s three Michelin starred restaurant alongside his brother Jacques and his father Régis in Saint-Bonnet-le-Froid. A return to his roots in the heart of the inspiring countryside he loves so much.
Supported by the Team France Bocuse d’Or and driven by an identity rooted in a family history imbued with strong values, France candidate Paul Marcon’s ambition today is to chart his own destiny. It’s a collective adventure based on human stories of transmission and emancipation, in the service of the reputation of our gastronomy. Thirty years after his father Régis Marcon won the Bocuse d’Or in 1995, the 28-year-old chef from Auvergne is now setting his sights on the world’s most prestigious gastronomic competition.
